Today is the most autumn day. Nashville’s fall colours are at their peak, the air is smoky and overcast, and it’s Halloween! This Chipotle Pumpkin Pasta was the result. This pasta is rich in flavour, with a hint of spice, creamy and creamy. This simple tomato-free pasta sauce will change your pasta routine.
MAKE IT A MEAL
This recipe makes four small servings. I recommend you serve it with a large green side salad to make it more substantial. To complete this meal, you can add chorizo or Italian sausage to the pasta. The sausage can be browned in a skillet with onions and garlic. Once it is browned, you can continue the recipe as normal.
PASTA OPTIONAL
While making the sauce, I noticed how delicious it was all on its own. I also realized how great it would be as a soup and not as a sauce for pasta. You can skip the pasta if you wish! This would make approximately 2 cups of soup.
CHIPOTLE PUMPKIN PASTA
This simple, tomato-free Chipotle Pumpkin Pasta recipe is spicy, creamy and delicious.

INGREDIENTS
- 1 yellow onion (0.32)
- 1 Tbsp olive oil ($0.16)
- 2 cloves of garlic ($0.16)
- 1/2 teaspoon chipotle powder ($0.05).
- 1 15oz. Pumpkin puree (£1.00)
- 1.5 cups chicken broth* ($0.20)
- 1/2 tsp salt ($0.02)
- Freshly cracked pepper ($0.03)
- 8 oz. pasta ($0.75)
- 1/4 cup heavy cream ($0.21)
- 1/4 cup grated Parmesan ($0.44)
INSTRUCTIONS
- Chop the onion and mince garlic. Sauté both in a skillet, with the olive oil, over medium heat until the onion becomes soft and translucent (about 3-5 min).
- Stir in the chipotle powder and continue to saute the onion for approximately one more minute. Add the pumpkin puree and chicken broth to the skillet. Stir until all ingredients are well combined.
- Reduce the heat to medium-low, and let the sauce simmer for 15 minutes. Cook the pasta according to the package instructions. Drain in a colander.
- After the sauce has simmered for 15 minutes, reduce the heat to low and add the heavy cream. Stir the pasta into the skillet. Let it cook in the sauce for 2 to 3 minutes.
- Stir in the grated Parmesan and finish by topping with a little cracked black pepper.
NOTES
Better Than Bouillon is my preferred method of making broth. It’s less expensive than canned or boxed broths, and I can make the exact amount I need for each recipe. Your sauce’s flavour is greatly affected by the broth. Make sure it’s full-flavoured and not watery.
