Ingredients
- Two beef fillets steaks
- 2 tsp sesame seed oil
- Sherry 2 tbs
- 1 tbsp hoisin sauce
- 2 tsp of white sugar
- 2 tsp of cornflour
- Two tablespoons of vegetable oil
- 4 crushed garlic cloves
- 5 cm ginger grated
- 1 cup roasted cashews
- Snow peas, 250g thinly sliced
SAUCE
- One tablespoon oyster sauce
- 1 tbsp soy sauce
- 1 tbsp sweet chili sauce
Method
- Pour all the sauces into a bowl, and whisk them together.
- Slice the beef thinly across the grain.
- Mix the sugar, cornflour, sesame oil, and hoisin sauce in a bowl.
- Stir the cornflour until it dissolves.
- Add the beef to the sauce and coat it evenly.
- Heat the wok to a very high temperature.
- Add one tablespoon of vegetable oil to the wok, and swirl it to cover.
- Stir fry a quarter of beef in the hot wok for approximately 1 minute, until it is browned.
- Repeat the process with the next batch until the real meat has been browned.
- Stir fry the garlic, ginger, and remaining oil in the wok for one minute.
- Add the beef and juices back to the wok.
- Add cashews, snow peas, and stir-fry sauce.
- Stir fry until heated.
